I've got an Aimpoint PRO on my rifle. The optic is fine, but I feel like I may need a riser on it considering my ear pro keeps getting in the way when I try to look through it (though I am left eye dominate trying to shoot right-handed which doesn't help.) What's a great way to judge which optic riser would work best for my optic? Should I just switch to in-ear ear pro instead of the bulky over-ear protection?

Try switching to in-ear first so you don’t throw off the zeroing of the rifle

I honestly love running a Unity mount. I forget the actual height it is. But it’s not insane and relieves a bit of neck strain. You’ll have to learn to hold a little higher up close but it’s minimal. Even if you do in ear pro, I think risers are great
